Instructions
Step 1: Prepare the Liver
- After soaking, remove the liver from the milk and gently pat each piece dry using paper towels. Dry liver browns more effectively during cooking.
- In a shallow bowl, combine the flour, salt, black pepper, garlic powder, and paprika. Dredge each liver slice in the seasoned flour mixture, coating both sides evenly. Shake off any excess flour.
Step 2: Cook the Onions
- Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the sliced onions and cook for 10–12 minutes, stirring occasionally. The onions should become soft, golden brown, and slightly caramelized.
- Cooking Intensity: Medium Heat
- Once cooked, transfer the onions to a plate and set aside.
Step 3: Brown the Liver
- Add the remaining butter and olive oil to the skillet.
- Increase the heat slightly to medium-high. Carefully place the coated liver slices into the skillet in a single layer.
- Cook for approximately 3–4 minutes per side.
- Cooking Intensity: Medium-High Heat
- Avoid overcrowding the pan. Cook in batches if necessary.
- The liver should be browned on the outside while remaining tender inside. Overcooking may result in a tough texture.
Step 4: Combine Everything
- Return the cooked onions to the skillet.
- Pour in the beef broth and gently stir to combine. Allow everything to simmer for 3–5 minutes until the flavors meld together.
- Cooking Intensity: Medium-Low Heat
- The broth will create a light, flavorful sauce that coats the liver and onions beautifully.
Step 5: Serve
- Remove from heat and garnish with fresh parsley if desired.
- Serve immediately with mashed potatoes, roasted vegetables, rice, or buttered noodles for a complete meal.
