Ingredients
- 10 fresh jalapeños, halved lengthwise and deseeded
- 200g brie cheese, cut into small cubes (rind optional)
- ½ cup fresh blueberries (slightly mashed)
- 2 tbsp honey
- 4 oz (115g) cream cheese, softened
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 6–8 slices beef or turkey bacon, cooked and crumbled (optional)
- 2 tbsp chopped fresh parsley (for garnish)

Instructions
- Preheat oven to 190°C (375°F) and line a baking tray with parchment paper. Slice jalapeños lengthwise and remove seeds and membranes; rinse under cold water for less heat.
- In a mixing bowl, combine softened cream cheese, garlic powder, salt, and black pepper until smooth. Gently fold in slightly mashed blueberries and honey, being careful not to overmix.
- Spoon the blueberry cream cheese mixture into each jalapeño half. Place a small cube of brie cheese on top of each. If using bacon, sprinkle crumbled pieces over the top.
- Bake for 18–22 minutes, or until jalapeños are tender and cheese is melted and slightly golden. Broil for the last 2–3 minutes for extra browning, watching closely to prevent burning.
- Remove from the oven and let cool for 5 minutes. Garnish with chopped parsley and drizzle with extra honey if desired. Serve warm.

Wear gloves when handling jalapeños to avoid irritation. Use ripe but firm blueberries for the best balance of sweetness. Do not overbake, or the peppers may become too soft. Variations include using plant-based cheeses for a vegan option, adding crushed nuts for crunch, swapping blueberries for raspberries or strawberries, or using mini sweet peppers for a milder version.
