  • 200 g white chocolate (high quality, chopped)
  • 300 ml heavy cream (cold)
  • 3 large eggs (separated)
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

1. Melt the Chocolate

  1. Place the white chocolate in a heatproof bowl.
  2. Melt it gently over a double boiler or in the microwave (in short bursts).
  3. Stir until smooth, then let it cool slightly.

2. Whip the Cream

  1. In a cold bowl, whip the heavy cream until soft peaks form.
  2. Refrigerate while preparing the rest.

3. Prepare the Egg Base

  1. Beat the egg yolks with sugar until pale and creamy.
  2. Add vanilla extract and mix well.
  3. Slowly fold in the melted white chocolate.

4. Whip the Egg Whites

  1. Beat egg whites with a pinch of salt until stiff peaks form.

5. Combine Everything

  1. Gently fold whipped cream into the chocolate mixture.
  2. Then fold in the egg whites carefully to keep the mousse airy.

6. Chill

  1. Spoon into serving glasses.
  2. Refrigerate for at least 3–4 hours (or overnight).
