Instructions

Step 1: Prep the Zucchini

  1. Wash and dry the zucchini.
  2. Slice into ¼-inch thick rounds (not too thin or they’ll burn; not too thick or they’ll be soft).
  3. Pro Tip: Use a mandoline for perfectly even slices, but a sharp knife works just as well.

Step 2: Season & Coat

  1. In a large bowl, toss the zucchini slices with: 1 tbsp olive oil
  2. Garlic powder
  3. Salt & pepper to taste
  4. Optional seasonings like Italian herbs or chili flakes
  5. Line a baking sheet with parchment paper or a silicone baking mat .
  6. Arrange zucchini rounds in a single layer , without overlapping.
  7. Sprinkle Parmesan cheese generously over each round.
  8. Freshly grated Parmesan works best for crispiness — avoid pre-shredded if possible.

  2. Place rounds in a single layer (you may need to do this in batches).
  3. Air fry for 8–10 minutes , checking halfway for doneness.

Step 4: Serve

  1. Remove from oven and let cool for 2–3 minutes (they crisp up as they cool). Serve immediately with:
  2. Marinara or garlic aioli for dipping
  3. A sprinkle of extra Parmesan or herbs
  4. As a crunchy side for grilled chicken or pasta dishes
