Ingredients

  • Fresh Ginger Root (Zingiber officinale): Contains high concentrations of gingerol, a bioactive compound known for its warming properties, anti-inflammatory support, and ability to soothe irritated throat tissues.
  • Raw Garlic Cloves (Allium sativum): Rich in organosulfur compounds, most notably allicin. Allicin forms when garlic cell walls are crushed or chopped, offering powerful antimicrobial and immunomodulatory support.
  • Red or Yellow Onion (Allium cepa): Packed with quercetin, a potent flavonoid antioxidant that helps clear mucus pathways and supports systemic response to seasonal irritants.
  • Fresh Lemon Juice & Zest (Citrus limon): Provides natural bioavailable Vitamin C, balances the sharpness of the alliums, and lowers the tonic’s pH to ensure safe preservation.
  • Raw Unpasteurized Honey: Acts as a natural osmotic extractor, pulling nutrient-rich juices out of the aromatic solids while offering antibacterial properties and a smooth, soothing viscosity for dry throats.

Ingredients List

  • Ginger Root: 100 grams (approx. 1 cup, finely sliced or grated)
  • Garlic Cloves: 75 grams (approx. 1 head or 12–15 medium cloves, peeled and crushed)
  • Red Onion: 150 grams (approx. 1 medium red onion, finely diced)
  • Fresh Lemon Juice: 120 mL (approx. 1/2 cup, freshly squeezed from 2 large lemons)
  • Lemon Zest: 1 tablespoon (finely grated from organic, unwaxed lemon peel)
  • Raw Unpasteurized Honey: 350 grams (approx. 1 cup of local, raw wildflower or clover honey)
  • Optional Enhancers: Ground Cayenne Pepper: 1/4 teaspoon (for enhanced thermogenic circulation)
  • Ground Organic Turmeric Root: 1/2 teaspoon (for systemic anti-inflammatory synergy)
  • Whole Black Peppercorns: 4–5 crushed (to optimize curcumin absorption if adding turmeric)

Instructions

Step 1: Sterilization & Glassware Prep

  1. Wash a 32 oz (1 Liter) glass mason jar thoroughly with hot water and dish soap, or run it through a high-heat dishwasher cycle. Ensure the glass jar, canning lid, cutting board, and prep knives are completely dry before proceeding. Water introduced into raw honey mixtures can raise moisture levels unnaturally, so keeping tools clean and dry maintains proper shelf stability.

Step 2: Prepare the Alliums (Garlic & Onion)

  1. Peel the garlic cloves and lay them flat on your cutting board. Use the flat side of a chef’s knife to firmly crush each clove, rupturing the cellular structure.
  2. Allow the crushed garlic to rest on the board for 10 minutes . This rest period lets the enzyme alliinase convert alliin into active allicin .
  3. While the garlic rests, finely dice the red onion into small, uniform pieces (approx. 1/4-inch or smaller) to maximize surface area contact with the honey.

Step 3: Prepare the Ginger & Lemon

  1. Scrub the ginger root clean. If using organic ginger, leave the peel intact for added microbial complexity; if using non-organic, scrape off the skin with the edge of a spoon. Finely matchstick (julienne) or grate the ginger.
  2. Wash and dry your lemons. Grate 1 tablespoon of outer yellow zest, avoiding the bitter white pith. Juice the lemons into a glass measuring cup, ensuring all seeds are strained out.

Step 4: Layering the Jar

  1. Layer the prepared raw ingredients inside the sterile glass jar in the following sequence:
  2. Bottom layer: Finely diced red onion.
  3. Second layer: Grated ginger root and crushed garlic cloves.
  4. Third layer: Lemon zest and optional dry spices (cayenne, turmeric, black pepper).

Step 5: Infusing with Lemon & Raw Honey

  1. Pour the freshly squeezed lemon juice directly over the layered aromatics.
  2. Slowly pour the raw honey over the mixture. Raw honey is thick, so allow it to seep down through the crevices between the ginger, garlic, and onions.
  3. Use a clean, non-metallic utensil (such as a wooden chopstick or silicone spatula) to gently agitate the contents, releasing trapped air bubbles.
  4. Ensure the honey completely submerges all solid plant matter by at least 1/2 inch.

Step 6: Room Temperature Cold-Extraction & Fermentation

  1. Seal the jar loosely with its lid to allow potential fermentation gases to vent naturally.
  2. Place the jar in a cool, dark place (such as a pantry cabinet) at room temperature ( 68∘F−74∘F68^\circ\text{F} – 74^\circ\text{F} 6 8 ∘ F − 7 4 ∘ F or 20∘C−23∘C20^\circ\text{C} – 23^\circ\text{C} 2 0 ∘ C − 2 3 ∘ C ) for 24 to 48 hours .
  3. Every 8–12 hours, give the jar a gentle swirl or flip (if tightly closed briefly) to ensure the liquid syrup coats all top ingredients.
  4. As the honey draws water out of the onions, ginger, and garlic via osmosis, the thick syrup will visibly thin into a rich liquid elixir.

Step 7: Straining & Bottling

  1. After 48 hours, place a fine-mesh stainless steel strainer or layered cheesecloth over a clean glass storage container or bottle.
  2. Pour the contents of the jar into the strainer, letting the clear syrup drain completely for 15–20 minutes. Press lightly on the solids with the back of a spoon to extract every drop of concentrated syrup.
  3. Transfer the liquid syrup into a dark amber or clear glass bottle with an airtight lid. Label with the preparation date.
  4. Store the strained syrup in the refrigerator. Cold storage slows down natural fermentation and maintains peak flavor intensity.
