Healthy baked salmon is one of those dependable recipes that proves a nutritious meal can also be incredibly simple, flavorful, and satisfying. With tender salmon fillets, fresh garlic, bright lemon, aromatic herbs, and a light coating of extra virgin olive oil, this recipe creates a meal that feels fresh and wholesome without requiring complicated preparation. The oven does most of the work. Once the salmon has been seasoned and arranged on a baking tray, it only needs a short cooking period to become tender and flaky. The result is moist fish with a lightly seasoned surface, fresh citrus aroma, and rich natural flavor.
Ingredients
- 4 salmon fillets, about 6 ounces each
- 2 tablespoons extra virgin olive oil
- 3 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, finely chopped
- 1 lemon, thinly sliced
- Lemon wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper or lightly grease the surface.
- Pat each salmon fillet thoroughly dry with paper towels. Arrange the fillets on the prepared baking tray, leaving a little space between each piece.
- Drizzle the extra virgin olive oil evenly over the salmon. Gently spread the oil across the surface of each fillet.
- In a small bowl, combine: Minced garlic, Fresh lemon juice, Lemon zest, Paprika, Italian seasoning, Sea salt, and Black pepper. Mix until the ingredients are evenly combined.
- Spread the seasoning mixture evenly across the top of each salmon fillet. Make sure the garlic and herbs are distributed across the fish rather than concentrated in one area.
- Sprinkle the chopped fresh parsley over the seasoned salmon. Place thin lemon slices over the top of each fillet.
- Transfer the tray to the preheated oven. Bake for approximately 12–15 minutes, depending on the thickness of the salmon. The fish should flake easily when tested with a fork and remain moist inside.
- Remove the salmon from the oven and allow it to rest for approximately 5 minutes. This gives the juices time to redistribute and allows the fish to finish cooking gently.
- Serve the salmon warm with fresh lemon wedges. Pair it with vegetables, salad, rice, quinoa, potatoes, or another preferred side dish.
Notes
Fresh or completely thawed frozen salmon can be used. Patting the fish dry helps the seasoning adhere properly. Do not overcook the salmon because excessive cooking can make it dry. Cooking time depends primarily on the thickness of the fillets. Leaving the skin on can help protect the fish during baking. Fresh lemon juice provides better brightness than bottled juice. Fresh parsley can be replaced with dill, thyme, rosemary, basil, cilantro, or chives. Add cayenne pepper if you prefer a spicy version. Smoked paprika can be used for a deeper flavor. Dijon mustard can be brushed onto the salmon for an additional flavor variation. Allow the salmon to rest before serving. Refrigerate leftovers promptly in an airtight container. Leftover salmon can be used in salads, wraps, sandwiches, grain bowls, or scrambled eggs.
