Equipment

  • Baking Vessel (Air Fryer Method): 7×7-inch or 8×8-inch heat-safe ceramic/silicone baking dish that fits comfortably into your air fryer basket.
  • Skillet / Saucepan: Medium non-stick saucepan for simmering the sauce.
  • Mixing Bowls: One large mixing bowl for the chicken filling.
  • Whisk & Silicone Spatula: For blending the cheese sauce without scorching.

Ingredients

For the Chicken Filling

  • 3 cups (approx. 450g) Cooked Chicken Breast or Thighs: Shredded (rotisserie chicken works exceptionally well).
  • 1 cup (115g) Monterey Jack Cheese: Freshly shredded (divided use).
  • 4 oz (115g) Cream Cheese: Softened to room temperature.
  • 1 can (4 oz / 113g) Diced Green Chiles: Mild or fire-roasted, drained.
  • 1 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Fine Sea Salt
  • 1/4 tsp Coarse Ground Black Pepper

For the Low-Carb Wraps

  • 12 Small Low-Carb Tortillas: 3g to 4g net carbs each (e.g., keto wheat tortillas or almond flour/egg-based keto wraps).

For the White Sour Cream Sauce

  • 2 tbsp (30g) Unsalted Butter
  • 2 cloves Garlic: Minced fine.
  • 1 can (4 oz / 113g) Diced Mild Green Chiles: Undrained.
  • 4 oz (115g) Cream Cheese: Cut into small cubes for easy melting.
  • 3/4 cup (180ml) Low-Sodium Chicken Bone Broth: Warmed.
  • 3/4 cup (180g) Full-Fat Sour Cream: At room temperature to prevent curdling.
  • 1/4 tsp Salt & Cracked Black Pepper: To taste.

For Topping & Garnish

  • 1.5 cups (170g) Monterey Jack or Pepper Jack Cheese: Freshly shredded.
  • 2 tbsp Fresh Cilantro: Chopped fine.
  • 1 Fresh Jalapeño: Sliced thin (optional).
  • 1/2 Fresh Lime: Cut into wedges.

Instructions

Step 1: Prepare the Chicken Filling

  1. Place the room-temperature cream cheese into a large mixing bowl and mash with a fork until smooth.
  2. Add the shredded cooked chicken, 1 cup of shredded Monterey Jack cheese, 1 can of drained green chiles, ground cumin, garlic powder, onion powder, smoked paprika, sea salt, and black pepper.
  3. Mix thoroughly until the chicken is evenly coated and the spices are distributed. Set aside.

Step 2: Make the Velvet White Sauce

  1. Place a medium saucepan over Medium Heat (Intensity: Moderate) . Melt the 2 tablespoons of butter.
  2. Add the minced garlic and sauté for 45–60 seconds until fragrant, ensuring the garlic does not brown.
  3. Stir in the remaining 1 can of diced green chiles (with their liquid) and simmer for 1 minute.
  4. Reduce the burner to Low Heat (Intensity: Gentle) . Add the 4 oz of cubed cream cheese and pour in the warm chicken bone broth. Whisk continuously until the cream cheese melts completely into a uniform liquid.
  5. Turn off the heat entirely. Whisk in the room-temperature sour cream until silky and smooth. Season with 1/4 tsp salt and black pepper. Taste and adjust seasoning as needed.
  6. Chef’s Note: Never boil the sauce after adding sour cream; excessive direct heat can cause natural dairy emulsions to break and turn grainy.

Step 3: Assemble the Enchiladas

  1. Warm the low-carb tortillas in the microwave for 15–20 seconds between damp paper towels to make them pliable and prevent cracking when rolled.
  2. Spread 1/3 cup of the warm white sauce across the bottom of your designated baking dish.
  3. Spoon roughly 1/4 cup of the seasoned chicken filling down the center of each tortilla.
  4. Roll the tortillas tightly and arrange them seam-side down in the dish, packing them snugly next to each other.
  5. Pour the remaining white sauce generously over the rolled enchiladas, covering the tops and edges completely to prevent the tortillas from drying out.
  6. Scatter the remaining 1.5 cups of shredded Monterey Jack (or Pepper Jack) cheese evenly over the sauced enchiladas. Top with fresh jalapeño slices if desired.
