Instructions
Step 1: Prepare the Purple Cabbage
- Remove any damaged outer leaves from the purple cabbage. Rinse the cabbage thoroughly under cool running water.
- Cut approximately 2 cups of cabbage into small pieces. Smaller pieces release their color more easily and help create a flavorful liquid.
- Place the chopped cabbage in a bowl and set it aside.
Step 2: Prepare the Blueberries
- Rinse the blueberries under cool water and remove any damaged berries or stems.
- If using frozen blueberries, allow them to thaw slightly or add them directly to the saucepan.
- Gently crush a few blueberries with the back of a spoon. This helps release their juice and enhances the fruity flavor of the drink.
Step 3: Combine the Ingredients
- Place the chopped purple cabbage and blueberries in a medium saucepan.
- Pour in the 5 cups of water and stir gently with a wooden spoon.
- At this stage, the water may look relatively light, but the color will deepen as the cabbage and blueberries simmer.
Step 4: Simmer the Mixture
- Place the saucepan over medium heat and bring the mixture to a gentle boil.
- Once it begins boiling, reduce the heat to low and simmer for approximately 10–15 minutes.
- The cabbage should soften, the blueberries should begin breaking apart, and the water should develop a rich purple color.
- Avoid boiling too aggressively because gentle simmering helps prevent the liquid from becoming overly concentrated.
Step 5: Allow the Mixture to Rest
- Turn off the heat and let the mixture rest for approximately 5 minutes.
- This gives the cabbage and blueberries a little extra time to release their color and flavor.
- Taste a small amount of the liquid once it has cooled enough to handle. If you prefer a stronger fruity flavor, you can gently press some of the blueberries before straining.
Step 6: Strain the Purple Liquid
- Place a fine-mesh strainer over a large heatproof bowl or jug.
- Carefully pour the mixture through the strainer, separating the liquid from the cabbage and blueberry solids.
- Press the solids gently with the back of a spoon to extract additional liquid, but avoid forcing too much pulp through the sieve if you want a smooth drink.
- Discard the remaining solids or save them for composting.
Step 7: Cool the Drink
- Allow the strained purple liquid to cool at room temperature until it is no longer hot.
- Once cooled, transfer it to a refrigerator-safe pitcher or container.
- Refrigerate for approximately 30 minutes or until thoroughly chilled. Do not place very hot liquid directly into ordinary glass serving bottles.
Step 8: Add Fresh Lemon Juice
- Remove the chilled purple liquid from the refrigerator.
- Add the fresh lemon juice gradually, stirring after each addition.
- The lemon adds a bright, tangy flavor and can also change the color of the cabbage-based drink. Purple cabbage contains natural pigments called anthocyanins, which respond to acidity.
- Depending on the cabbage and the amount of lemon juice, the drink may become a brighter magenta or reddish-purple shade.
Step 9: Sweeten with Honey
- Add 3 tablespoons of honey and stir until completely dissolved.
- Taste the drink and add the remaining tablespoon if you prefer a sweeter flavor.
- You can also use maple syrup, agave syrup, or another sweetener of your choice. For a completely unsweetened version, simply leave out the honey.
Step 10: Add Fresh Mint
- If desired, gently crush a few fresh mint leaves between your fingers to release their aroma.
- Add them to the pitcher and stir lightly.
- For a stronger mint flavor, allow the drink to rest in the refrigerator for another 10–15 minutes before serving.
Step 11: Prepare the Serving Glasses
- Fill tall glasses with ice cubes.
- Add a few fresh blueberries and a slice of lemon to each glass for a beautiful presentation.
- Pour the chilled purple drink into the glasses, leaving a little room at the top for garnishes.
Step 12: Garnish and Serve
- Finish each glass with a fresh mint sprig and an additional lemon slice.
- Stir gently before drinking to distribute the flavors evenly.
- Serve immediately while cold. You can also transfer the remaining drink into clean glass bottles and refrigerate for later.
