Instructions

Intensity 1: The Prep (Active, 15 minutes)

  1. Preheat & Prepare: Preheat your oven to 425°F (220°C) . Line a baking sheet with parchment paper for easy cleanup.
  2. Select and Scrub: Choose two large, oblong Russet potatoes. Scrub them thoroughly under cold water to remove any dirt and pat them completely dry with a kitchen towel. Moisture is the enemy of crispiness!
  3. Create the “Guards”: This is the most crucial step to ensure you don’t cut all the way through the potato. Place a potato on your cutting board and position a wooden spoon handle (or a chopstick) on each long side of the potato. The handles will act as a “guard” for your knife, preventing you from slicing all the way to the bottom.
  4. Make the First Cut: Using a sharp chef’s knife, make your first cut straight down into the potato, starting about ¼-inch from one end. Slice down until your knife hits the wooden spoons. You should have about a ½-inch uncut “base” at the bottom holding the potato together.
  5. Continue Slicing: Continue making parallel cuts, about ⅛ to ¼-inch apart, along the entire length of the potato. Maintain the same depth for every slice. The goal is to create a “fan” of thin slices that are all still connected at the bottom.
  6. The Final Cut: Once all the parallel slices are made, carefully turn the potato 90 degrees on your cutting board (keeping the wooden spoon handles in place) and make one final, long cut down the center of the potato, from top to bottom. This is what will create the “blooming” effect, turning your fan into a flower.
  7. Repeat: Repeat the entire cutting process with the second potato.

Intensity 2: The Flavor Infusion (Active, 10 minutes)

  1. Make the Seasoning Oil: In a small bowl, combine the olive oil (or melted butter), kosher salt, black pepper, garlic powder, and smoked paprika. Whisk until well combined.
  2. The Gently Open: Gently, using your fingers, coax the “petals” of the potato apart. They will be tight initially, so be patient. The goal is to create space between each slice so the oil and seasoning can penetrate every nook and cranny.
  3. Brush and Season: Using a pastry brush, generously brush the seasoned oil all over the potato, making sure to get it deep between all the slices. Don’t be shy! This is where the flavor is built. Flip the potato over and brush the bottom as well. Reserve a little oil for later.

Intensity 3: The Bake (Inactive, 1 hour 15 minutes)

  1. First Bake: Place the potatoes cut-side up on the prepared baking sheet. Bake for 45 minutes . After 45 minutes, the potatoes will have started to open up and the edges will be beginning to crisp.
  2. The “Re-Bloom”: Carefully remove the baking sheet from the oven. Using a spatula or fork, gently press down on the center of each potato to further separate the “petals.” This allows the heat to reach the interior more effectively. Brush the potatoes with any remaining seasoned oil or pan drippings.
  3. Second Bake: Return the baking sheet to the oven and bake for an additional 25-30 minutes . The final bake will transform them into a glorious golden-brown flower. The outer edges should be exceptionally crispy, while the center remains tender and fluffy. A knife inserted into the center should meet very little resistance.
  4. Rest: Remove from the oven and let the potatoes rest for about 5 minutes on the baking sheet. This allows the steam to settle.
