Ingredients

For the toasted pecans

  • 1 ½ cups pecan halves or roughly chopped pecans
  • 1 tablespoon unsalted butter, optional
  • A tiny pinch of salt
  • 1 cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ½ cup granulated white sugar
  • 2 large eggs, preferably at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¾ teaspoon fine salt
  • 1 ½ cups semisweet chocolate chips
  • 1 cup toasted chopped pecans

For finishing

  • A handful of extra chocolate chips
  • A handful of pecan pieces
  • Flaky sea salt, optional

Instructions

  1. Preheat your oven to 350°F / 175°C .
  2. Spread the pecans on a baking sheet.
  3. Toast them for approximately 6–8 minutes , stirring once halfway through.
  4. Watch them carefully because pecans can burn quickly.
  5. Remove them from the oven and allow them to cool completely.
  6. Once cool, roughly chop them.
  7. Pro tip: Don’t chop them too finely. A mixture of small pieces and larger chunks gives the cookies a much better texture.
  8. In a medium bowl, combine:

  10. Baking soda
  11. Baking powder
  12. Salt
  13. Whisk everything together.
