Ingredients
For the toasted pecans
- 1 ½ cups pecan halves or roughly chopped pecans

For the cookie dough
- 1 cup unsalted butter, softened
- ¾ cup packed light brown sugar
- ½ cup granulated white sugar

- Preheat your oven to 350°F / 175°C .
- Spread the pecans on a baking sheet.
- Toast them for approximately 6–8 minutes , stirring once halfway through.
- Watch them carefully because pecans can burn quickly.
- Remove them from the oven and allow them to cool completely.
- Once cool, roughly chop them.
- Pro tip: Don’t chop them too finely. A mixture of small pieces and larger chunks gives the cookies a much better texture.
- In a medium bowl, combine:
- Flour
- Baking soda
- Baking powder
- Salt
- Whisk everything together.
- Set aside.
- This distributes the raising agents and salt evenly throughout the flour, preventing concentrated pockets of baking soda.
- Place the softened butter in a large mixing bowl.
- Add:
- Brown sugar
- Granulated sugar
- Beat for approximately 2–3 minutes until creamy, smooth, and slightly fluffy.

Notes
Store completely cooled cookies in an airtight container. They are best enjoyed within several days. To make a slightly stale cookie soft again, microwave it for approximately 8–10 seconds . The chocolate will soften and the center will become pleasantly warm.
