A recipe for crispy air-fried chicken drumsticks coated in a homemade BBQ glaze, featuring a spice rub and a final caramelization step.

- Start by removing your chicken drumsticks from the refrigerator about 15 minutes before cooking to take the chill off. Use paper towels to pat the drumsticks as dry as possible.
- Place the dried drumsticks into a large mixing bowl. Drizzle them with the olive oil, tossing gently to ensure every piece is lightly and evenly coated.
- In a small separate bowl, whisk together the smoked paprika, garlic powder, onion powder, kosher salt, black pepper, cumin, and cayenne pepper. Sprinkle this spice blend generously over the chicken, using your hands or tongs to rub the seasonings into the skin and meat until every drumstick is thoroughly coated.
- Preheat your air fryer to 380°F (193°C) for about 3 to 5 minutes.
- Lightly mist the air fryer basket with a high-smoke-point cooking spray. Arrange the seasoned drumsticks in a single layer inside the basket, leaving a little space between each piece to allow the hot air to circulate freely. Do not overcrowd the basket; if necessary, cook in two separate batches.
- Cook at 380°F (193°C) for 15 minutes, flipping the drumsticks halfway through at the 7-minute mark using tongs.
- While the chicken is undergoing its initial cook, prepare the sticky glaze. In a small bowl, whisk together the barbecue sauce, honey (or brown sugar), apple cider vinegar, and Worcestershire sauce until smooth. Set aside.
- After the initial 15 minutes of cooking, open the air fryer basket. Use a pastry brush to paint a generous layer of the BBQ glaze all over the top and sides of each drumstick.
- Increase the air fryer temperature slightly to 400°F (204°C) and cook for another 5 to 7 minutes. Watch closely during the final few minutes so the sugars in the barbecue sauce caramelize deeply and char slightly without burning.
- Insert a digital meat thermometer into the thickest part of the largest drumstick, making sure not to touch the bone. The internal temperature must reach at least 165°F (74°C) (though poultry drumsticks often taste best and tenderize further when cooked closer to 175°F to 180°F due to connective tissue).
- Remove the drumsticks from the air fryer and transfer them to a clean cutting board or serving platter. Let them rest uncovered for 5 minutes. Brush with any remaining fresh glaze if desired, and serve warm.
