  • ¼ teaspoon paprika
  • 1 tablespoon olive oil, divided (3 teaspoons)
  • 3 cups cubed russet potatoes, cut into 1-inch cubes; about 2 to 3 potatoes depending on size, scrubbed clean, rinsed, and patted dry with paper towels

Instructions

  1. Combine the kosher salt, black pepper, garlic powder, and paprika in a small bowl. Mix thoroughly and set the seasoning blend aside.
  2. Place the cubed russet potatoes into a medium mixing bowl. Add 2 teaspoons of the olive oil and toss the potatoes until they are evenly coated.
  3. Measure out ¼ teaspoon of the seasoning mixture and reserve it for the onions. Sprinkle the remaining seasoning over the potatoes and toss thoroughly so the seasoning is distributed across the potato pieces.
  4. Arrange the seasoned potatoes in the air fryer basket in a single layer. Avoid overcrowding the basket when possible so hot air can circulate around the pieces.
  5. Air fry the potatoes at 390 degrees F for 7 minutes. While the potatoes are cooking, place the chopped yellow onion into the same mixing bowl. Add the remaining 1 teaspoon of olive oil and toss until the onion pieces are evenly coated. Sprinkle the reserved ¼ teaspoon of seasoning mixture over the onions and toss again.
  6. After the initial 7 minutes, carefully remove the air fryer basket. Add the seasoned onions to the potatoes. Shake the basket gently or use tongs to toss the potatoes and onions together.
  7. Return the basket to the air fryer and cook for another 7 to 9 minutes, or until the potatoes are golden brown and tender and the onions are perfectly cooked.
  8. If preparing a double batch in separate batches, combine the finished potatoes and onions in the air fryer basket after all batches are cooked. Heat everything together for 1 to 2 minutes before serving.
