- 1 pound (450 grams) large shrimp, peeled and deveined
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon dried parsley
- ½ teaspoon dried oregano
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- ½ cup cornstarch
- 2 large eggs
- 2 tablespoons milk
- 2 cups panko breadcrumbs
- ½ teaspoon paprika for the breadcrumbs
- ½ teaspoon garlic powder for the breadcrumbs
- Vegetable oil or canola oil for frying
- Fresh lemon wedges for serving
Instructions
- Rinse the shrimp gently under cold water and pat them completely dry using paper towels. Inspect each shrimp carefully and remove any remaining shell pieces or veins.
- Place the shrimp into a large mixing bowl. Add the salt, black pepper, garlic powder, onion powder, paprika, oregano, parsley, cayenne pepper if using, and lemon juice. Mix thoroughly until every shrimp is evenly coated.
- Allow the shrimp to marinate for about 20 minutes.
- Place the flour and cornstarch together in a shallow dish and mix them thoroughly until fully combined.
- In another bowl, whisk together the eggs and milk until smooth.
- In a third shallow dish, combine the panko breadcrumbs with the additional paprika and garlic powder.
- Arrange the dishes in this order: Seasoned flour mixture, Egg mixture, Seasoned panko breadcrumbs.
- Take one shrimp and lightly coat it in the flour mixture. Shake off the excess flour.
- Dip it into the egg mixture until completely covered. Allow any extra egg to drip away.
- Roll the shrimp in the seasoned panko breadcrumbs. Press gently so the breadcrumbs adhere evenly.
- Place the coated shrimp on a baking tray or large plate. Repeat until all shrimp are breaded.
- Let the breaded shrimp rest for about 10 minutes before frying.
- Choose a deep, heavy-bottomed pot or deep skillet. Pour enough oil to create a depth of approximately 2 to 3 inches.
- Heat the oil gradually to 350°F (175°C).
- Carefully lower a few shrimp into the hot oil. Do not overcrowd the pan. Cook in small batches.
- Fry each batch for approximately 2 to 3 minutes per side until the shrimp become beautifully golden brown with an evenly crisp coating.
- Transfer the cooked shrimp onto a wire rack or a paper towel-lined tray to drain excess oil.
- Allow the oil to return to the proper temperature before frying the next batch.
