Ingredients

For the Casserole:

  • 300g egg noodles
  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups shredded cheddar cheese
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons butter

For the Creamy Sauce:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • ½ cup heavy cream (optional for richness)
  • Salt and black pepper to taste
  • ½ teaspoon paprika
  • ½ teaspoon mustard powder (optional)

Optional Topping:

  • ½ cup breadcrumbs
  • 2 tablespoons melted butter
  • Extra cheddar cheese

Instructions

1. Cook the Noodles & Broccoli

  1. Boil egg noodles according to package instructions. In the last 2–3 minutes, add broccoli to the same pot. Drain and set aside.

2. Prepare the Base

  1. In a large pan, melt butter and sauté onion until soft. Add garlic and cook briefly until fragrant.

3. Make the Cream Sauce

  1. In another pan, melt butter and whisk in flour to form a roux. Gradually add milk while whisking to avoid lumps. Stir in cream, salt, pepper, paprika, and mustard powder. Cook until thickened, then add 1½ cups of cheddar cheese and stir until melted.

4. Combine Everything

  1. Mix noodles, broccoli, onion mixture, and cheese sauce together until well coated.

5. Assemble & Bake

  1. Transfer mixture to a greased baking dish. Top with remaining cheese and optional breadcrumb mixture. Bake at 180°C (350°F) for 20–25 minutes until bubbly and golden.

6. Serve

  1. Let cool slightly before serving. Enjoy warm!
