Dark poultry cuts contain a generous amount of intramuscular fat and connective tissue, making them inherently forgiving and naturally richer than chicken breasts. When baked at high heat, the fat under the skin slowly renders out, self-basting the meat to keep it exceptionally juicy while turning the outer skin shatteringly crisp. Unlike white meat, which easily dries out past 165°F (74°C), chicken thighs thrive between 175°F and 185°F (79°C–85°C), where collagen fully dissolves into rich gelatin.

Ingredients

  • 6 bone-in, skin-on chicken thighs (approx. 2 to 2.5 lbs / 1 to 1.2 kg), trimmed of excessive loose skin
  • 2 tablespoons extra virgin olive oil (or avocado oil for a high smoke point)
  • 1 tablespoon smoked paprika (or sweet paprika for a milder profile)
  • 1½ teaspoons garlic powder
  • 1½ teaspoons onion powder
  • 1 teaspoon dried oregano (or dried thyme)
  • 1 teaspoon kosher salt (use fine sea salt in slightly reduced quantity)
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon cayenne pepper (optional, adds warmth without overpowering heat)
  • Fresh lemon wedges & chopped flat-leaf parsley (for serving)

Instructions

  1. Position an oven rack in the center position. Preheat your oven to 425°F (220°C). Line a heavy-duty rimmed baking sheet with aluminum foil or parchment paper for easy cleanup. Place an oven-safe stainless steel wire roasting rack on top of the sheet, and coat the rack lightly with cooking spray or oil.
  2. Remove chicken thighs from the refrigerator. Inspect each piece and trim any disproportionately large flaps of excess fat or loose, unattached skin hanging off the edges. Lay the thighs across paper towels and firmly pat them dry on all sides, ensuring zero residual moisture remains on the skin.
  3. In a small mixing bowl, whisk together the smoked paprika, garlic powder, onion powder, dried oregano, kosher salt, black pepper, and cayenne pepper until uniform.
  4. Place the dried chicken thighs in a large mixing bowl. Drizzle evenly with the 2 tablespoons of olive oil. Use your hands or tongs to toss the thighs, making sure the oil coats every crevice. Sprinkle roughly one-third of the spice blend across the underside (bone side) of each thigh. Turn the chicken thighs over so they are skin-side up. Pull and smooth the skin tightly over the meat to maximize crisp surface area, then generously sprinkle the remaining spice mixture across the top and sides.
  5. Transfer the thighs to the prepared wire rack on the baking sheet, placing them skin-side up. Leave at least 1 to 1.5 inches of open space between each thigh. If the pieces touch, they will trap escaping moisture and steam instead of roast.
  6. Transfer the baking sheet to the center rack of the preheated oven. Bake undisturbed at 425°F (220°C) for 35 to 40 minutes. The skin will turn deep amber-gold and bubbly. Check doneness by inserting an instant-read digital meat thermometer into the thickest section of meat, avoiding contact with the bone. The internal temperature should read at least 175°F to 185°F (79°C–85°C). Optional extra crisping: If you desire a deeply blistered, crackling texture, switch the oven to Broil (High) during the final 2 to 3 minutes of cooking. Keep your eyes on the oven constantly, as the paprika and spice rub can scorch quickly under a direct broiler flame.
  7. Remove the baking sheet from the oven. Transfer the thighs onto a warm serving platter or cutting board. Let the chicken rest uncovered for 5 to 7 minutes. Do not tent with foil, as trapped steam will soften the crisp skin. Resting allows the muscle fibers to relax and redistribute the savory cooking juices evenly throughout the meat. Garnish with fresh chopped parsley and serve warm alongside lemon wedges.
