Ingredients

  • 1 lb (450g) chicken breast or chicken tenders
  • 2 large eggs
  • ½ cup pork rinds, crushed into fine crumbs (or more as needed)
  • ½ cup grated Parmesan cheese (optional for added flavor)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (optional, for a carnivore-friendly seasoning)
  • 1 teaspoon smoked paprika (optional, for flavor and color)
  • Beef tallow, lard, or butter for frying

Instructions

  1. Slice the chicken breast into fry-like strips, about ½ inch thick. Pat them dry with paper towels.
  2. In a shallow bowl, beat the eggs until smooth. In another shallow bowl, combine the crushed pork rinds, Parmesan cheese (if using), salt, and any optional seasonings.
  3. Dip each chicken strip into the beaten egg, ensuring it’s fully coated. Roll the chicken strip in the pork rind mixture, pressing gently to adhere the coating. Place the breaded chicken strips on a plate or tray.
  4. Pan-Frying Method: Heat a skillet over medium heat with enough tallow, lard, or butter to coat the bottom of the pan. Fry the chicken fries in batches, about 2–3 minutes per side, until golden brown and cooked through (internal temperature of 165°F/74°C). Transfer to a plate lined with paper towels to drain excess grease.
  5. Air-Frying Method: Preheat the air fryer to 375°F (190°C). Lightly grease the air fryer basket with a small amount of melted butter or cooking spray. Arrange the chicken fries in a single layer, leaving space between them. Cook for 10–12 minutes, flipping halfway through, until crispy and cooked through.
