Cheesy Garlic Texas Toast

Texas toast is defined by its substantial thickness, with slices cut roughly 1 inch thick. This structural thickness is critical: it allows the exterior surface to toast to an audible crunch while insulating the interior crumb so it stays fluffy and tender beneath heavy layers of melting butter and cheese. Standard sliced white bread will easily collapse or become unpleasantly soggy under this volume of toppings.

Ingredients

  • 8 thick slices Texas toast bread (store-bought or cut from an unsliced loaf of brioche or white pullman bread, ~1 inch thick)
  • 1/2 cup (1 stick / 115g) unsalted butter, fully softened to room temperature
  • 2 tablespoons extra virgin olive oil
  • 4–5 cloves fresh garlic, very finely minced or grated into a paste
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon fine sea salt (reduce to 1/4 tsp if using salted butter)
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh flat-leaf parsley, finely chopped (plus extra for garnish)
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 1 1/2 cups (170g) low-moisture whole milk mozzarella cheese, freshly shredded
  • 1/2 cup (50g) Parmigiano-Reggiano or Pecorino Romano, freshly grated
  • 1/2 cup (55g) sharp provolone or white cheddar, shredded (optional)

Instructions

  1. Preheat the oven to 400°F (205°C) with the rack in the middle-to-upper third position. Line a large rimmed baking sheet with parchment paper or heavy-duty foil.
  2. In a medium mixing bowl, combine the softened butter, olive oil, minced fresh garlic, garlic powder, onion powder, sea salt, black pepper, finely chopped parsley, and dried oregano. Use a fork or silicone spatula to mash and whip the mixture vigorously until all ingredients are evenly distributed, creamy, and spreadable.
  3. Arrange the 8 bread slices in a single layer on the prepared baking sheet. Spread the garlic butter generously from crust to crust on the top side of each slice. Lightly brush a thin dab of butter or olive oil on the bottom side of each slice.
  4. Place the baking sheet in the oven and bake for 6 to 7 minutes to par-bake the bread and melt the garlic butter into the crumb.
  5. In a separate bowl, toss the shredded mozzarella, grated parmesan, and provolone together. Distribute the mixed cheeses evenly over each toasted slice, piling it high right up to the edges. Sprinkle a tiny pinch of red pepper flakes on top if desired.
  6. Return the baking sheet to the oven. Bake for an additional 4 to 5 minutes until the cheese is completely melted and bubbly. Turn the oven setting to High Broil for 1 to 2 minutes, watching closely until the cheese blisters into spots of golden brown.
  7. Allow the toast to rest on the hot pan for 2 minutes so the bubbling cheese sets slightly. Garnish with a sprinkle of freshly chopped parsley. Slice diagonally and serve steaming hot.
