  1. In a medium glass mixing bowl, combine the softened cream cheese, grated sharp cheddar, grated mozzarella, grated fresh garlic, smoked paprika, garlic powder, onion powder, salt, and black pepper. Work the mixture with a stiff silicone spatula until completely uniform and creamy. Fold in the crumbled smoked bacon, finely diced jalapeños, and the white and light-green slices of the green onions. Reserve the darker green scallion tops for finishing.
  2. Lightly dust a flat wooden prep board or clean counter with a teaspoon of all-purpose flour. Unfold the chilled sheet of puff pastry and gently roll out the seams, squaring it off to approximately a 10 x 12-inch rectangle. If the dough feels warm or sticky, chill in the refrigerator for 5 minutes before spreading.
  3. Dollop the cream cheese filling across the surface of the dough. Using an offset spatula, spread the mixture from edge to edge into an even layer, leaving a clean, bare 3/4-inch border along the top long edge.
  4. Starting from the long edge nearest to you, lift the dough and roll it upward into a tight, snug cylinder. Keep firm, even tension across the roll so no interior air voids form. When reaching the clean border, lightly brush that 3/4-inch edge with egg wash. Roll the cylinder fully over the seam, pressing gently along its length to secure a tight seal.
  5. Wrap the rolled log snugly in a sheet of parchment paper or plastic wrap, twisting both ends. Transfer the wrapped roll to the freezer for 20 to 25 minutes (or refrigerator for 60 minutes) to flash-chill.
  6. Preheat the air fryer to 375°F (190°C) for 3 minutes. Remove the pastry log from the freezer and unwrap it on a cutting board. Discard the outer 1/4-inch uneven tips from both ends.
  7. Using a very sharp serrated knife or unflavored dental floss, slice the log into 16 uniform rounds, each approximately 3/4-inch thick. Wipe the blade with a damp kitchen towel between cuts to preserve distinct spiral patterns.
  8. Lightly mist the perforated bottom of the air fryer basket with avocado oil spray. Arrange 8 pinwheels in the basket in an upright spiral orientation, ensuring at least 1 inch of open space between each piece.
  9. Lightly brush the exposed outer pastry edges of each wheel with egg wash and dust the top of each pinwheel with a pinch of grated Parmesan cheese.
