Equipment

  • Air Fryer: Circulates rapid hot air to create an even, golden-brown crust without submersion in oil.
  • Rolling Pin: Ensures dough rolls out to a consistent 1/8-inch thickness for even baking throughout.
  • Parchment Paper: Prevents fragile, low-gluten protein dough from sticking to the counter while rolling.
  • Pastry Brush: Glazes the pies with an egg wash evenly to promote rich browning and shine.
  • Small Skillet: Softens the diced apples and thickens the spiced filling before assembly.

Ingredients

  • 1/2 cup (60g) unflavored whey-casein blend protein powder (Note: Casein keeps dough pliable; pure whey can bake dry).
  • 1/2 cup (56g) fine almond flour
  • 1/3 cup (80g) non-fat plain Greek yogurt (Note: Strain any liquid whey off the top before measuring).
  • 1 tbsp (15ml) unsweetened almond milk (only as needed to bring dough together).
  • 1/4 tsp baking powder
  • 1 pinch fine sea salt
  • 1 medium Granny Smith apple (approx. 150g), peeled and finely diced into 1/4-inch cubes
  • 1 tbsp (12g) granular erythritol or monk fruit sweetener
  • 1/2 tsp ground Ceylon cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp (5ml) fresh lemon juice
  • 1 tbsp (15ml) water
  • 1/8 tsp xanthan gum (thickens the natural juices without cornstarch).
  • 1 large egg, lightly beaten with 1 tsp water
  • 1/2 tsp granulated monk fruit mixed with a pinch of cinnamon (for dusting)

Instructions

  1. Precook the Apple Filling: Place diced apples, granular sweetener, cinnamon, nutmeg, lemon juice, and 1 tablespoon water into a small non-stick skillet over medium-low heat. Simmer for 5–6 minutes until apples soften slightly and release their liquid. Sprinkle in xanthan gum, stir vigorously for 30 seconds until juices turn into a glossy glaze, remove from heat, and let cool completely.
  2. Prepare the Dough: Whisk almond flour, protein powder, baking powder, and salt together in a medium bowl. Fold in the cold Greek yogurt using a rubber spatula or fork until crumbly. Use clean hands to knead the mixture inside the bowl into a cohesive dough ball (if too crumbly, add almond milk 1 teaspoon at a time).
  3. Roll and Cut: Divide the dough ball into 4 equal portions. Place each portion between two sheets of parchment paper and roll out into an oval or rounded rectangle roughly 1/8-inch thick.
  4. Fill and Seal: Spoon 1 to 1.5 tablespoons of cooled apple mixture onto one half of each dough piece, leaving a 1/4-inch border. Lightly brush edge borders with beaten egg wash, fold the empty half over the filling, and crimp edges firmly with the tines of a fork to seal.
  5. Vent and Glaze: Cut 2 small steam slits across the top of each pie using a sharp paring knife. Brush tops lightly with the remaining egg wash and dust with the cinnamon-sweetener mix. Chill assembled pies in the freezer for 8 minutes to firm up the fat.
  6. Air Fry: Preheat your air fryer to 330°F (165°C). Line the basket with perforated parchment or lightly spray the grate with cooking spray. Arrange pies in a single layer with at least 1 inch of clearance between them. Air fry for 10–12 minutes, flipping gently with a spatula at the 8-minute mark, until the pastry surfaces are firm, golden brown, and slightly blistered. Cool on a wire rack for 5 minutes before serving.
