Instructions

Step 1: Prep and Cut the Potatoes

  1. Scrub the potatoes thoroughly under cold running water. You may peel them entirely or leave the skin on for extra rustic flavor.
  2. Cut the potatoes into uniform 1-inch bite-sized cubes . Uniformity is key to ensuring every piece cooks evenly in the air fryer.

Step 2: Parboil with the Secret Alkaline Hack

  1. Bring 4 to 6 cups of water to a rolling boil in a large saucepan over high heat.
  2. Add 1 tsp of fine sea salt and 1 tsp of baking soda to the boiling water. Why baking soda? Alkaline water breaks down the pectin on the surface of the potatoes, creating a starch-rich slurry that crisps up into a glass-like crust when air-fried.
  3. Add the potato cubes to the boiling water. Reduce heat slightly and parboil for 5 minutes (they should be slightly tender on the outside but firm in the center when pierced with a fork).
  4. Drain the potatoes into a colander and let them steam-dry for 2 minutes .

Step 3: Rough Up the Edges

  1. Return the drained potatoes to the empty warm pot or a large mixing bowl.
  2. Vigorously shake the colander or bowl for 10 seconds to rough up the exterior edges of the potato cubes. The potato surfaces should look mashed and coated in a creamy starch paste—this paste turns into ultimate crunch in the air fryer!

Step 4: Season and Oil Coating

  1. Drizzle the 2 tablespoons of oil over the warm, roughed-up potatoes.
  2. Sprinkle the garlic powder , onion powder , dried rosemary , smoked paprika , salt , and black pepper evenly over top.
  3. Use a rubber spatula or wooden spoon to gently fold everything together until every cube is thoroughly coated in oil and spices.

Step 5: Air Fry to Golden Perfection

  1. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  2. Transfer the seasoned potatoes into the preheated air fryer basket. Spread them out into a single layer (a small overlap is fine, but do not overcrowd).
  3. Air fry at 400°F (200°C) for 20 to 25 minutes .
  4. The Shake Factor: Halfway through cooking (around the 10 to 12-minute mark), pull the basket out and give it a vigorous shake to reposition the potatoes. This ensures 360-degree heat distribution.

Step 6: Garnish & Serve

  1. Check for doneness: the outsides should be deeply golden brown, blistering, and crunchy, while a fork easily slides into the center.
  2. Transfer the hot roast potatoes to a serving dish. Toss with fresh chopped parsley and optional grated Parmesan cheese. Serve immediately while roaring hot!
