A beloved retro dessert that requires no oven, candy thermometer, or pastry bag. It features layers of honey-sweet graham crackers that soften overnight into a tender, cake-like texture, a velvety vanilla custard filling, and a blanket of rich chocolate glaze. It is a simple, affordable, and nostalgic treat perfect for potlucks and family gatherings.
Ingredients
- 2 (3.4 oz) packages instant vanilla pudding mix (not cook-and-serve)
- 3 cups cold whole milk (2% works; whole milk is creamier)
- 1 teaspoon vanilla extract (optional)
- 8 oz frozen whipped topping (Cool Whip), thawed (or 2 cups lightly sweetened whipped cream)
- 1 (14.4 oz) box honey graham crackers (about 14-16 full sheets)
- 1 (16 oz) container chocolate frosting (store-bought or homemade)
Instructions
- Select a 9×13-inch baking dish (glass, metal, or ceramic). No need to grease.
- In a large bowl, whisk the instant vanilla pudding mix with 3 cups cold milk and vanilla extract for about 2 minutes until thickened. Let the pudding sit for 5 minutes to fully thicken.
- Gently fold in the thawed whipped topping until the mixture is uniform, pale, and billowy. Do not overmix.
- Arrange a single layer of graham crackers across the bottom of the dish, breaking pieces as needed for complete coverage.
- Spread half of the vanilla custard mixture evenly over the crackers.
- Top the custard with another full layer of graham crackers.
- Spread the remaining vanilla custard over the second cracker layer.
- Add a final layer of graham crackers on top.
- For the chocolate top: Option A (Traditional): Microwave store-bought chocolate frosting for 15-20 seconds until pourable, stir, and spread evenly. Option B (Homemade): Heat ½ cup heavy cream until simmering, pour over 1 cup semi-sweet chocolate chips, let sit 2 minutes, whisk until smooth, and pour over top. Option C (Fudgey): Melt 1 cup chocolate chips with ½ cup sweetened condensed milk and 2 tablespoons butter, stir until smooth, and spread over top.
- Cover and refrigerate for at least 8 hours, preferably overnight, to allow the crackers to soften.
- Slice into squares with a sharp knife, wiping the blade clean between cuts. Serve cold.
Notes
Whole milk is recommended for a creamier texture. Do not rush the pudding setting time. You can substitute real whipped cream (2 cups heavy cream whipped with ¼ cup powdered sugar and 1 tsp vanilla) for Cool Whip. Honey graham crackers are traditional, but cinnamon or chocolate grahams can be used. The cake improves with rest; day two is better than day one. Store covered in the refrigerator for 4-5 days; it does not freeze well. For neat cuts, use a sharp knife dipped in hot water and wiped dry between slices.
