Instructions

Step 1: Prep & Core the Cabbage

  1. Wash the cabbage head thoroughly and wipe it dry. Remove and discard any loose or bruised outer leaves.
  2. Place the cabbage stem-side down on a stable cutting board.
  3. Using a sharp chef’s knife, slice the cabbage vertically into 3/4-inch to 1-inch thick slabs (steaks) . Keep the core intact at the bottom of each slice—this holds the layers together during cooking.

Step 2: Season the Steaks

  1. In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, salt, and black pepper.
  2. Brush both sides of each cabbage steak generously with the seasoned oil mixture. Ensure the oil coats all the crevices so the leaves crisp evenly.

Step 3: First Air Fry (Caramelization Phase)

  1. Pre-heat your air fryer to 375°F (190°C) for 2–3 minutes.
  2. Arrange the cabbage steaks in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
  3. Air fry at 375°F (190°C) for 8 to 10 minutes , flipping gently with a spatula halfway through, until the edges are golden brown and crispy and the centers are tender when pierced with a fork.

Step 4: Add Cheese & Melt

  1. Carefully top each cabbage steak with a generous amount of shredded cheese (about 1/4 cup per steak).
  2. Air fry for an additional 2 to 3 minutes at 375°F (190°C) until the cheese is completely melted, bubbly, and slightly browned on top.

Step 5: Garnish & Serve Immediately

  1. Transfer the cabbage steaks carefully to a serving plate using a flat spatula.
  2. Sprinkle with fresh chopped parsley or chives, and add red pepper flakes or hot honey if desired. Serve hot!
