Instructions

Step 1: Prepare the Turkey Legs (10 minutes)

  1. Pat the turkey legs completely dry with paper towels. Moisture is the enemy of crispy skin, so take your time here. If your air fryer basket is small, you may need to cook the legs one at a time — overcrowding steams the meat instead of roasting it.

Step 2: Season (2–3 minutes)

  1. Brush each turkey leg generously with olive oil or melted butter. In a small bowl, combine the smoked paprika, garlic powder, onion powder, thyme, rosemary, black pepper, salt, and cayenne (if using). Rub the spice mixture evenly over all sides of the legs, working it into the skin and any crevices.

Step 3: First Air Fry — High Heat for Skin (15 minutes at 380°F / 193°C)

  1. Preheat the air fryer at 380°F (193°C) for 3 minutes. Place the turkey legs in the basket in a single layer, skin-side up. Air fry for 15 minutes at 380°F (193°C) . This initial high-heat phase renders fat and starts crisping the skin. Intensity: Medium-high.

Step 4: Flip and Continue (15 minutes at 360°F / 182°C)

  1. Using tongs, carefully flip the legs. Reduce the temperature to 360°F (182°C) and cook for another 15 minutes . This gentler phase allows the meat to cook through without burning the exterior. Intensity: Medium.

Step 5: Check Temperature and Finish (10–20 minutes at 350°F / 177°C)

  1. Insert a meat thermometer into the thickest part of the leg, avoiding the bone. Turkey must reach 165°F (74°C) for safety; for tender, fall-off-the-bone meat, aim for 175–180°F (79–82°C) . If not yet at temperature, continue air frying at 350°F (177°C) in 5-minute increments , checking after each. Most legs need an additional 10–20 minutes depending on size and air fryer model. Intensity: Medium-low.

Step 6: Rest (5 minutes)

  1. Transfer the turkey legs to a cutting board or plate and tent loosely with foil. Rest for 5 minutes — this allows juices to redistribute so the meat stays moist when cut.

Step 7: Serve

  1. Garnish with fresh parsley if desired and serve hot alongside roasted vegetables, mashed potatoes, or a crisp green salad.
