Instructions

Step 1: Prepare the Air Fryer

  1. Preheat your air fryer to 350°F (175°C) for 5 minutes. This ensures the crust starts crisping immediately. Lightly grease your 6-inch pie pan or ramekin with butter or non-stick spray.

Step 2: Make the Filling

  1. In a medium mixing bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated. Tip: Let the mixture sit for 5 minutes. The sugar will draw out the natural juices from the apples. After 5 minutes, sprinkle the cornstarch over the mixture and toss again. This slurry will help thicken the filling so your pie doesn’t become soggy.

Step 3: Prepare the Crust

  1. Lightly flour your countertop and roll out the pie dough. Cut a circle slightly larger than your pie pan for the bottom crust. Gently press the dough into the pan, allowing it to come up the sides. Prick the bottom of the dough with a fork a few times to prevent air bubbles.

Step 4: Assemble the Pie

  1. Spoon the apple mixture into the crust. Drizzle the melted butter over the top of the apples. Roll out the remaining dough and cut it into thin strips to create a lattice top, or simply place a solid dough circle on top and cut three small slits for ventilation. Pinch the edges to seal.

Step 5: The Egg Wash

  1. Brush the beaten egg over the top crust and edges. This is the secret to achieving that professional, glossy golden-brown finish. Sprinkle the coarse sugar over the top for a bit of crunch.

Step 6: Air Fry

  1. Place the pie pan into the air fryer basket.
  2. Time: 25 to 30 minutes.
  3. Temperature: 350°F (175°C).
  4. Intensity Check: Check the pie at the 15-minute mark. If the crust is browning too quickly, cover the edges with a strip of aluminum foil (a “pie shield”). The pie is done when the crust is deep golden brown and the filling is bubbling through the vents.

Step 7: The Rest

  1. Carefully remove the hot pan from the air fryer. Do not cut immediately. Let the pie rest for at least 10 minutes. This allows the cornstarch to set, ensuring the filling doesn’t run out when you slice it.
