Ingredients
For the Mozzarella Sticks:

- 1/2 cup All-purpose flour

- 1 teaspoon Garlic powder

Step 1: Prep the Cheese and Breading Station
- Unwrap your mozzarella string cheese sticks. If you prefer bite-sized or sturdier sticks that hold their shape better in the air fryer, cut each stick in half right down the middle.
- Set up a standard three-bowl breading station in a row to keep your workspace clean and efficient: Bowl 1: Combine the all-purpose flour, a pinch of salt, and a pinch of black pepper.
- Bowl 2: Whisk together the two large eggs and one tablespoon of whole milk until smooth.
- Bowl 3: Mix the breadcrumbs, garlic powder, dried Italian seasoning, salt, and black pepper.
Step 2: The Double-Breading Technique (Crucial Step)
- To prevent the mozzarella from leaking out while cooking in the air fryer, a double coating is essential. A single layer often leaves microscopic gaps where the melting cheese can escape.
- Take a piece of cheese and dredge it completely in the flour , shaking off any excess. The flour acts as a primer so the wet ingredients stick.
- Dip the floured cheese directly into the egg mixture , ensuring it is fully coated.
- Roll the cheese in the breadcrumb mixture , pressing gently so the crumbs adhere evenly.
- Repeat the process for maximum protection: Dip the breaded stick back into the egg mixture a second time, and then roll it once more in the breadcrumbs , pressing firmly to create a thick, sealed armor.
- Place the finished stick onto a parchment-lined baking sheet. Repeat with the remaining cheese sticks.
Step 3: Freeze to Set
- Place the baking sheet loaded with your breaded mozzarella sticks into the freezer for at least 30 minutes (up to 1 hour).
- Do not skip this step! Freezing ensures the cheese is completely chilled solid before it hits the hot air fryer. If the cheese is room temperature, it will melt and ooze out through the breading before the crust has time to crisp up.
Step 4: Preheat and Spray
- Preheat your air fryer to 390°F (200°C) for 3 to 5 minutes so it is blazing hot when the food goes in.
- Generously mist your air fryer basket with olive oil or avocado oil spray to prevent sticking.
- Arrange the frozen mozzarella sticks in a single layer in the basket, leaving a small space between each stick. Do not overcrowd the basket , as airflow is necessary for an even crunch. (Cook in batches if your air fryer is smaller).
Step 5: Air Fry to Perfection
- Generously spray the tops and sides of the frozen mozzarella sticks with cooking spray until no dry breadcrumb spots remain visible. (This step is key to achieving a golden-brown fry texture without actual deep-frying).
- Cook at 390°F (200°C) for 6 to 8 minutes .
- Check them around the 5-minute mark. You are looking for a deep golden-brown crust. As soon as you see even a tiny hint of cheese starting to peek or bubble through a seam, immediately remove them from the heat to prevent all the cheese from melting out.
